Cooking is tough... and other life lessons.

Yesterday evening, I made it home before Carolyn and decided to help her out by making dinner. Technically, I wouldn't have called what I was doing "cooking"; instead, it was more like "assembling things together" or "following the instructions" (Thanks Martha Stewart for your chicken enchilada recipe).
Though Mrs. Stewart's recipe said that it would only take 20 minutes of prep time and 45 minutes total, my total time spent in the kitchen was about an hour for the prep, as I think the recipe assumes you're on a cooking show where all the ingredients are already prepared and in separate clear bowls. Plus, how do those chefs on TV mince garlic so fast?!? It's like they're asking for their fingers to get chopped off! Overall, the recipe calls for you to be doing a few things at the same time. I love multi-tasking, but it's a bit difficult to be "stirring occasionally" while also trying to heat tortillas in the microwave, preparing a baking dish, and trying to shred some monterey jack cheese all at the same time.
In the end the meal turned out to be not only edible, but delicious. It made me realize that though Carolyn makes her cooking seem effortless, there really is a lot of work that goes into planning dinners multiple times a week. And by me taking charge of the meal preparation, I see how it really helped Carolyn out by allowing her to get off her feet upon getting home instead of having to prepare a meal for the two of us right away.
We're coming up on 2 years of marriage and I'm still learning how to serve Carolyn. A lesson here? Husbands, don't wait till your wife is 7 months pregnant to learn how to cook.

as for the recipe,
1 to 2 tablespoons minced canned chipotles in adobo?!? simmer a flour sauce?!?
martha stewart, this is why you intimidate me. our chicken enchilada "recipe" is like my version of fried rice...roll up random leftover ingredients in corn tortillas, pour some chicken broth and cheese over it all, then bake it :P
