Today as I was making the turkey I found a can of green beans in the pantry that I thought was not going to be put to use for Thanksgiving dinner. I decided to use it for a green bean and potato dish. However, after I had finished slicing red potatoes from the fridge, my sister informed me that those green beans were to be used for green bean casserole. In a moment of panic, I decided to look for another recipe for the potatoes so that they wouldn't go to waste. What I found was a Greek Potato Stew from Allrecipes.com.

I quickly searched the pantry and found a can of diced tomatoes as well as an old can of olives. I had everything I needed for this dish. As I started making it, my mom could smell the fragrant aroma from this dish. The garlic and the oregano really pair well to make this smell really good, as well as taste really good as well! Though I hadn't planned on making this today, it worked really well and went along with the turkey even though at first glance it might not seem like a Thanksgiving dish.

I'm full from the meal. Turkey turned out well, although I am slightly congested and so I couldn't really tell if the spices helped the turkey flavor or not. But visually speaking, I consider it a good thing if the turkey meat pretty much just falls off the bones. We tried transferring the turkey to another platter, and the whole top breast portion lifted off from the rest of the body because the meat was so tender. Oops.
