Did you know that Kraft Foods regularly
publishes a free magazine with delicious recipes to try and enjoy?
Okay, up until a few days ago, I didn't know either. Carolyn
introduced me to it on Sunday when I was trying to decide what kind
of food to prepare for my bible study guys.
I don't really consider myself a cook. In college, the most
complicated thing I could make was spaghetti. Though I perfected
the art of noodle cooking, I never really branched out from that
due to lack of time. Fast-forward to 2007 and nothing has really
changed:) But I have realized that I do enjoy hosting and providing
food for people. This past semester, for the Texas/OU game, I
invited a bunch of people over to the house to watch the game. Two
girls from ECHO couldn't come till later since they were out doing
something. When they were free to come over, they were both hungry
and considered getting some food before coming over to the house.
Then they said, "Wait, we've never been to Jimmy's house where
there wasn't food prepared. Let's go now!"
I think it's that food is a means to fellowship, a time to just
sit down with people and get to know each other better. So, since I
have been super busy this semester and haven't had time to really
hang out with some of the ECHO guys, I invited them over for
dinner. Unfortunately, I am not a cook. Fortunately, Carolyn is
well-versed with the things in the kitchen. We went to the grocery
store at around 10pm Sunday night to buy food for the following
night. She came over to my house to help me prep some of the
ingredients and we finished around 1am in the morning.
On the menu last night were, 8-hour slow-cooked BBQ short ribs, a
double-layered enchilada bake, homemade mashed potatoes, Tyson's
spicy buffalo wings, and flaky dinner rolls. Nick Foran came
through in the clutch and brought 4 flavors of gelato for dessert.
During dinner we talked about what we were most thankful for. The
guys have become very close to each other during the semester and
so we were able to be very open with each other.
Everyone left full and happy.
